Ausias. Pedreguer,
Spain
In the small town of Pedreguer, Ausiàs Signes and Felicia Guerra have created a restaurant that feels deeply connected to where they are and where they’ve come from.
For Ausiàs, cooking began long before opening his own restaurant. He grew up around his family’s restaurant, surrounded by kitchens and hospitality, before training as a pastry chef and eventually finding his way into savoury cooking. That background still runs through the food today — technically precise, but rooted in memory, local produce and the flavours of the Marina Alta.
We spent time with Ausiàs in the kitchen, talking about family, ambition, the move back to Pedreguer and the strange contradiction at the heart of cooking: the pressure and intensity of the job, but also the sense of calm and purpose he finds inside the kitchen.
More than anything, this is a story about returning to a place, building something of your own, and finding a way to express yourself through food.
This is why they cook.
