Tula. Javea, Spain

In the old town of Jávea, Tula is a small Michelin-starred restaurant shaped by the landscape around it.

Led by Borja Susilla and Clara Puig, the food is rooted in the Mediterranean — local produce, the sea, familiar flavours and the traditions they grew up around — but expressed in a way that feels completely their own.

We spent the day with them, from the quiet preparation of the morning through to the intensity of lunch service, to understand what sits behind the restaurant and the food they create.

Away from the accolades, Tula is ultimately a story about two people, their relationship with where they come from, and the years of work that have gone into building something deeply personal.

This is why they cook.
